Toastie Potato Snack

INGREDIENTS


  • 2 whole potatoes, with skin on
  • 1 tbsp finely chopped rosemary (or dried)
  • 1 tbsp parmesan cheese (or cheddar)
  • 1 tsp olive oil
  • Salt to taste

ALSO GREAT WITH
Yellow Potatoes

INSTRUCTIONS


  1. Place whole potatoes in cold salted water and bring to the boil until cooked.
  2. Meanwhile pre-heat sandwich press.
  3. Once potatoes are cooked, drain and pat dry.
  4. In a bowl, mix potatoes with rosemary, cheese, salt & olive oil.
  5. Place on the sandwich press and press down to break and flatten potatoes.
  6. Cook till crispy and enjoy!

TIP: Much of the potatoes nutrients lie just under the skin so keep the skin on when you can.
