Roast Potatoes with Fresh Herbs

Cooking Time 45 minutes

Serves 2 to 4

INGREDIENTS


  • 1kg Royal Blue potatoes, peeled and cut in half or quartered if extra large
  • 2 cloves garlic, peeled
  • 2 cloves garlic, finely chopped
  • 1tsp oregano, finely chopped
  • 2 tsp thyme, finely chopped
  • 2 tsp rosemary, finely chopped
  • ½ cup olive oil

Blue Potatoes

ALSO GREAT WITH
Yellow Potatoes

INSTRUCTIONS


  1. Preheat oven to 280 degrees.
  2. Place potatoes in a saucepan with 2 tsp salt and 2 peeled cloves of garlic.
  3. Cover with water and bring to the boil.
  4. Simmer for 10-15 minutes. Potatoes should be still firm.
  5. Drain well.
  6. Mix olive oil with chopped garlic, oregano, thyme and rosemary.
  7. Coat potatoes with oil.
  8. Roast potatoes for 30 minutes or until golden brown.
