Warm Baby Potato Salad

Serves 6 to 8

INGREDIENTS


  • 1kg baby red potatoes
  • 200g grape tomatoes, halved
  • 1 bunch corriander
  • Olive oil
  • Sea salt flakes
  • Cracked black pepper

White Potatoes

INSTRUCTIONS


  1. In cold salted water add baby red potatoes to a pot and bring to the boil. Cook for 8 minutes.
  2. Roughly chop coriander, add halved grape tomatoes and place in a large mixing bowl.
  3. Strain potatoes and allow to rest for 15 minutes.
  4. Quarter potatoes with skin on, add tomato and coriander mic
  5. Season to taste with salt, pepper and olive oil.

TIP: Mix cold leftovers with leafy greens for a yummy salad.
