Simple Baby Roast Spuds

Serves 6 to 8

INGREDIENTS


  • 1kg baby blue potatoes
  • 2 cloves garlic
  • 1 spring of rosemary
  • Olive oil
  • Sea salt flakes
  • Cracked black pepper

Blue Potatoes

ALSO GREAT WITH
Yellow Potatoes

INSTRUCTIONS


  1. Preheat oven to 180C.
  2. Peel and crush garlic, roughly chop rosemary.
  3. Add potatoes with skin on, garlic, rosemary, olive oil, salt and pepper to a roasting pan.
  4. Roast in oven for 20-25 minutes or until tender.

TIP: Serve as a substitute for chips or add to your roast dinner.
