Potato Bacon & Eggs

INGREDIENTS


  • 15 baby potatoes, sliced in half
  • 2 tbsp olive oil
  • 3 brown onion, roughly diced
  • 150g bacon, diced
  • 1/4 cup Italian parsley leaves
  • 4 eggs, poached
  • Cracked pepper

INSTRUCTIONS


  1. Preheat oven to 190c.
  2. Heat a large saucepan (suitable to go in the oven) on medium heat. Add oil, onion, bacon, and potato, slowly sauté the mixture for 15 minutes on the stove then transfer to the 190c preheated oven, bake for 20 to 25 minutes or until the potatoes are tender.
  3. Meanwhile, poach eggs.
  4. Garnish with parsley leaves and freshly cracked black pepper. Serve with eggs.

TIP: Perfect as a quick family breakfast!
