Kale & Chorizo Potato Soup

Serves 6

INGREDIENTS


  • 4 yellow potatoes, diced, skin on
  • 2 tbsp olive oil
  • 2 brown onions finely chopped
  • 100g diced dry chorizo sausage
  • 1 crushed garlic
  • 1 tsp smoked paprika
  • 2L chicken stock
  • 1/2 bunch fresh kale finely sliced
  • 1 Tbsp Greek yoghurt
  • Season to taste

INSTRUCTIONS


  1. Slowly sauté olive oil, onion and chorizo for at least 10 minutes.
  2. Add garlic and smoked paprika. Cook out until fragrant.
  3. Add stock, potatoes and slowly simmer covered for 20 minutes.
  4. Removed from heat add kale and cover for 10 minutes.
  5. Using a stick blender, pulse to a coarse texture.
  6. Add yoghurt on top and season to taste.

TIP: Skip step 5 for a chunky, hearty style soup.
