Breakfast Potato Rosti

INGREDIENTS


  • 2 blue potatoes, peeled
  • 1 tbsp olive oil or grape seed oil
  • 1 egg
  • Few sprigs rosemary
  • Salt and pepper

INSTRUCTIONS


  1. Slowly pre heat a frying pan and oil to low heat.
  2. Grate potatoes straight into frying pan and make a 5 cm hole in the middle.
  3. Slowly fry potato 5 minutes per side or until golden brown on the edges, season with rosemary, salt and pepper.
  4. Crack an egg in the middle, cover with a lid and cook for another 4 minutes, depending how you like your eggs.

TIP: Save the potato peel and use to make crispy skin chips!
